There is a posting on the NESWorld.com forum that confirms some of my NES conversion frustrations. It seems that there are certain NES games that can't be converted to Playchoice because there isn't a compatible Playchoice PCB.
I've tried several of these games for myself and have had little to no luck. This list should help others avoid future frustrations.

As for your question, playchoice PCBs are rather versatile. If you had every board, you could put any licensed NES game on them except for the following:
Any PAL game that requires PAL timing to run properly (don't expect them to work)
Any game that requires a battery (no place for a battery on the PCB)
Any of the following games:
Cobra Triangle
Jeopardy! 25th Anniversary Edition (Captain Skyhawk compatible)
Jeopardy! Junior Edition (Captain Skyhawk compatible)
Solstice
Wheel of Fortune Family Edition (Captain Skyhawk compatible)
Wheel of Fortune Junior Edition (Captain Skyhawk compatible)
Who Framed Roger Rabbit (Captain Skyhawk compatible)
Wizards & Warriors (Captain Skyhawk compatible)
World Games
Wrestlemania
Deadly Towers
Videomation
Gemfire
Castlevania III - Dracula's Curse
Laser Invasion
Bandit Kings of Ancient China

I saw the list of incompatible games. There are some misprints. Wheel of Fortune and Jeopardy games are a Mapper 7 with 128 PRG Vertical which will work on a Captain Skyhawk. I tried the Wheel of Fortune and Jeopardy games. I hope this helps someone.
Actually, there are others that should work too like Roger Rabbit, Wizrds & warriors. It looks like they indivdual who tried this didn't have Captain SkyHawk which makes sense since it is a rare board.
